Magnesium is responsible for over 300 reactions in your body including sleep, muscle function, blood sugar, blood pressure, and stress relief. But eating magnesium rich foods is not enough. How you prepare them determines how much your body actually absorbs.
If you’ve been eating spinach, beans, nuts and still feel tired, crampy, or sleepless, try these prep tricks:
1. Stop Boiling Your Vegetables , Steam or Microwave Instead
Dark leafy greens like spinach, kale, and Swiss chard are top magnesium sources. But boiling causes magnesium to leak out into the water.
Research shows boiling spinach, pumpkin, and peas can strip away a significant amount of magnesium, potassium, and zinc.
Better prep:Lightly steam for 3-5 minutes or microwave with a splash of water. This preserves magnesium, vitamin C, and antioxidants. If you must boil, use the cooking water for soups or stews.
2. Soak Your Grains, Beans, Nuts and Seeds Before Cooking
Whole grains, beans, lentils, oats, almonds and pumpkin seeds are excellent for magnesium, but they contain phytates, natural compounds that bind to magnesium and block absorption.
Better prep: Soak them before cooking.
– Beans & lentils: 8-12 hours, then rinse
– Oats, brown rice, quinoa: 4-6 hours
– Almonds, pumpkin seeds, chia: overnight
Soaking activates an enzyme called phytase that breaks down phytates by up to 60%, improving magnesium, iron, and zinc absorption. Sprouting them after soaking is even better.
3. Pair Magnesium Foods With Vitamin D and B6
Magnesium needs helpers to get into your cells.
Vitamin B6: Helps pull magnesium into cells. Pair your magnesium meals with banana, potato, chicken, or chickpeas.
Vitamin D:Boosts intestinal absorption. Eat magnesium foods with eggs, salmon, or get 15 mins of morning sunlight daily.
Protein: Lean proteins like chicken break down into peptides that protect magnesium from blockers in the gut.
Try this combo: Grilled salmon + steamed spinach + banana for dessert.
4. Cook Your Greens and Support Your Gut
Raw spinach is high in oxalates, which can also block minerals. Lightly cooking spinach, ugu, and kale reduces oxalates and makes magnesium more available.
Also feed your gut bacteria. A healthy gut absorbs more minerals.
Better prep:
– Add fermented foods like yogurt, kefir, or ogi to your meals
– Eat oats : its beta-glucan fiber is a prebiotic that supports mineral absorption
– Add berries : their polyphenols help activate magnesium transporters in the gut
5. What to Avoid During Magnesium Meals
Some habits drain magnesium fast:
- Don’t take high-dose calcium and magnesium supplements together, they compete for absorption. Space them by 2 hours.
- Limit soda, excess alcohol, and too much coffee, they increase magnesium loss in urine.
- Avoid refined sugar with magnesium meals, it reduces uptake.
